Harvested at the beginning of October. Selection of some low yielding vines to create a wine to lay down. Grapes totally destemmed and controlled fermentation at 25ºC. 16 months cask ageing.
The finished wine is deep purple in colour with subtle hues of ruby red. The nose is filled with intense aromas of jammy-fruit and coupled with nuances of vanilla and toffee. On the palate, concentrates of ripe bramble fruit, black chocolate and sweet spice are prominent. Tannins are soft and silky. Very well balance with refreshing acidity. The finish is long and satisfying.
Ideal with red meat fillets such as steak or lamb. Alternatively, try with casseroles or mature hard cheeses.
Best served at 17º.
